Objectifs

The aim of the "Vine and Wine Sciences" Master's degree is to train senior executives in the wine sector who can work in the sector's farms, organisations, industries, companies and academic laboratories, carrying out management, sales and marketing, environmental management or research and R&D activities.

The aim of the SVV Master's degree is to support the diversification of professions in the vine and wine sector by training senior executives with skills in management, sales and marketing, viticulture, chemistry, microbiology, oenological processes, environmental management and management of research and R&D projects to join the sector's farms, organisations, industries or academic laboratories in order to meet tomorrow's challenges in relation to societal and environmental concerns.

He/she is able to : :

  • Designing and proposing sustainable and agro-ecological winegrowing management strategies to winegrowing companies
  • Synthesise and analyse scientific and technical data and information acquired through wine-growing experiments in order to propose the agronomic and technical itineraries of tomorrow
  • Supporting and supervising the implementation of new itineraries by drawing on a network of players and new decision-making and digital tools
  • Advise wine companies on environmental management and reducing inputs
  • Set up experimental or targeted research initiatives to identify the corrective measures to be applied and propose the strategies of tomorrow.
  • Master biological, agronomic, physical and chemical knowledge and techniques with the aim of developing quality wine production strategies.
  • Monitor regulations in order to develop production and/or marketing practices
  • Identify and dialogue with key players (inter-professional organisations, political representatives, etc.) in order to develop strategies for improving and producing quality wine, taking into account the socio-economic and environmental context.
  • Evaluate the impact of corrective measures developed to improve the qualitative and quantitative performance of a winegrowing operation as part of the quality and continuous improvement process.
  • Designing wine-growing experimentation strategies within technical and research organisations as part of Good Laboratory Practice, the specifications linked to experimentation rules (CA, IFV, ODG, interprofessions, etc.).
  • Analysing biological and physico-chemical data sets, in order to describe and control the mechanisms (biological, physico-chemical or microbiological) that have an impact on wine quality
  • Evaluate the impact of strategies developed to improve the performance (economic, organisational, etc.) of companies and/or organisations in the wine industry in order to ensure their economic sustainability.
  • Apply operational and strategic marketing methods and intercultural management to the sale and marketing of wines
  • use cost accounting and cost analysis dashboards to draw up budgets and monitor results
  • Apply and create economic and financial management tools in wine companies to improve their performance
  • Use national and international legislation to market wines
  • Designing and carrying out technical and economic audits to assess the sales and marketing performance of companies in the wine industry (business plan, financial framework, etc.).
  • Implementing management strategies (marketing, team and project management) for companies and/or organisations in the wine industry in order to define their strengths and weaknesses with a view to continuous improvement.
  • Devising new management strategies (marketing and management) to improve the performance (economic, organisational, etc.) of companies and/or organisations in the wine industry.

Admission requirements

Candidates must hold :

  • a bachelor's degree in a scientific field (agronomy, biology, chemistry, compulsory for the oenology/processes and viticulture/environment courses) or in the fields of economics, marketing or management, or any other diploma attesting to a level of higher education equivalent to 180 European credits in the same fields; or
  • or one of the validations provided for in articles L. 335-5, L. 613-3, L. 613-4, L. 613-5 and L. 613-6 of the Education Code and the texts adopted for their application.

The course is open to initial and continuing training, work-study contracts (professionalisation contracts and apprenticeship contracts), VAE and VAPP.

Applications are assessed on the basis of a dossier and an interview with the selection panel in French and/or English.

Through the application and interview, the candidate must be able to demonstrate the following expectations:

  1. Degree in science (agronomy, biology, chemistry) or in economics, marketing or management
  2. Fluency in English so as to be able to understand the essential content of subjects and express themselves clearly and in detail
  3. mastery of digital skills in the areas of information retrieval, data management and processing, and the creation of textual and multimedia documents
  4. Consistency of previous career in relation to the training project / Logical construction of teaching and/or professional-associative experience

Course of studies, general organisation

The Master's degree in Vine and Wine Sciences is a 120 ECTS credit course offering 5 courses:

  • Viticulture-environment
    Oenology-Processes
    Wine Trade and Marketing with a double degree from the
    IAE Bordeaux
  • Vineyard and Winery Management, a joint degree with Bordeaux Sciences Agro
  • UBGrade-SENSE

The courses are organised over two years, around teaching units and professional periods grouped into Skills and Knowledge Blocks (SKBs) to offer a variety of pathways, enabling each student to build an individualised curriculum in line with his or her career plans.

The course is therefore organised around 3 types of BCC:

  • Core BCCs for 60 ECTS, common to all programmes and enabling each student to acquire the cross-disciplinary skills common to the Master's level and corresponding to the blocks of skills in the RNCP sheet.
  • Open-ended CCBs for 12 ECTS, enabling each student to broaden his or her field of expertise through teaching outside the disciplinary field.
    Professionalizing BCCs for 48 ECTS, specific to the discipline and depending on the pathway, in order to acquire the skills required for the student's professional project.

Gateways, equivalences and further study

  • The "Viticulture-Environment" Master's degree in Vine and Wine Sciences allows students to enter the professional world directly after graduation or to continue their studies at doctoral level.
  • The Master's degree in Vine and Wine Sciences, 'Oenology-Processes' pathway, enables students to enter the wine industry directly after graduation, either in the RαD (research and development) sector or to continue their studies at doctoral level.
  • The "Viticulture-Environment" and "Oenology-Processes" courses can also be used to apply for the Diplôme National d'Oenologue.
  • The aim of the Vine and Wine Sciences Masters course in "Wine Trade and Marketing" is to enable students to enter the wine trade and marketing sector directly after graduation.

Exemptions and equivalence of courses may be granted on application to the Teaching Committee.

Pace of training

Standard programme (work placement):
The traditional Initial Training pathway leads to a Master's degree (4 semesters) with a full-time curriculum and practical experience in the form of work placements at the end of each year.

Work-study programme :
The sandwich course combines work experience in a company with theoretical teaching throughout the Master's programme. There are two sandwich courses: "Oenology-Processes" and "Viticulture-Environment".

The teaching methods used contribute to the acquisition of knowledge and skills through lectures, practical work, tutorials, site visits and periods spent in companies.
For students on work-study contracts (apprenticeship and professional contracts), the above teaching methods are supplemented by periods of skills acquisition in companies.
