Guest speaker: Laura Zerbini - Head of Consumer Research at the Institut Paul Bocuse
Laura Zerbini will be presenting the Institut Paul Bocuse's Living Lab (experimental restaurant), a tool that is unique in the world and enables research to be carried out into consumer eating habits, as close as possible to real-life situations.
From a methodological point of view and using detailed case studies, Laura Zerbini will compare two experimental approaches for studying consumer behaviour in context:
- Studies within the Living Lab, a tool designed to carry out studies in real but controlled situations
- Or an in situ approach where researchers/experimenters go out into the field to collect data.
