Program
Day 1:
- Practical rules and techniques of tasting, vocabulary
- Notion of the physiology of taste
- Individual sensitivity, taster performance and learning
Day 2:
- Influence of tasting conditions
- Cognition and tasting
- Volatile compounds and aromatic perception
Day 3:
- Elementary flavours
- Taste balance
Includes: two tastings a day
